scallion pancakes (danila original) -test this one
1 c. mashed sweet potato
3 scallions, thinly sliced
1/4 c. coconut flour
1/2 t. baking powder
1 t. sea salt
1/4 c. water
coconut oil for baking
in a large bowl add the sweet potatoes, then add scallions, coconut flour, baking powder, salt and water. stir to incorporate.
heat a large skillet over med heat. coat pan with coconut oil then add 1/8 to 1/4 c. portions to the batter and lightly brown each pancake on each side. Serve with lemon sour cream sauce
